Pesto Cauliflower Gnocchi with Broiled Salmon

Another easy dinner made possible by cauliflower gnocchi, this time doused in fresh, summery pesto and paired with broiled salmon. So quick to throw together, it's a great recipe to have in your back pocket for those busy weeknights!

Here's what you need:

  • Cauliflower gnocchi
  • Oil -- olive or avocado work great here!
  • Pesto -- pick your favorite, or make some at home
  • Salmon filet
  • Chili lime seasoning from Trader Joe's
  • Your favorite greens -- I love arugula for this one!
  • Goat cheese
Yields1 Serving

Ingredients:

 24 tbsp Oil, Olive or Avocado
 1 Package of Cauliflower Gnocchi
 3 tbsp Pesto
 1 Salmon Filet
 Chili Lime Seasoning
 Salt
 Arugula, or other greens

Directions:

Heat two tablespoons of oil in a pan. When hot, add the cauliflower gnocchi directly from the freezer. Do NOT add water. Mix well so the oil coats all pieces, and saute on medium until golden and starting to brown, about 7-10 minutes. Mix with pesto.

Set the oven to broil (on high) and grease a small baking sheet with oil. Place salmon on the prepared sheet and coat with oil, chili lime seasoning, and salt. Broil for 5-7 minutes (this might take longer if you have a thicker piece of fish!)

Serve the gnocchi and the salmon over a bed of arugula and sprinkle with goat cheese.
