Ranch Kale Salad w/ Salmon

Ranch Kale Salad w/ Salmon

No boring kale salads here! Seriously, love me a good kale salad and this combo was absolutely delicious. My trick is to dress/toss the kale with the dressing first and let it “marinate” while you prep the rest of the ingredients. This allows it to soften just enough. This ranch dressing is a healthy take on a classic and is made with cauliflower puree, buttermilk, and lots of flavorful herbs/spices. It worked so well with the sweet potatoes, salmon, radicchio, and pine nuts. This salad combo is amazing and I hope you enjoy it!

Kale Ranch Summer Salad

Yields1 Serving
Prep Time15 minsCook Time25 minsTotal Time40 mins

Ingredients:

2 tbsp Ranch Dressing (I linked the one I used above)
 3 cups Chopped Kale
1 Medium Sweet Potato, Cut into 1/2 inch pieces
¼ Head of Radicchio, Chopped Julienne (About 1 cup)
2 tbsp Pine Nuts or Slivered Almonds
1 8 oz Salmon Filet (or one per person)
 Sea salt, Pepper to taste
Olive Oil for cooking sweet potatoes and salmon

Directions:

1

Set oven to 400.

2

Start with the kale. Chop a large head of Kale (about 3 cups) and toss in a large bowl with the creamy ranch. Massage the kale with the dressing for a few minutes. Add in radicchio and mix. You can use your hands or tongs. Let it sit while you prepare the rest of the ingredients in the fridge.

3

Chop sweet potatoes, toss with olive oil and lay on a cookie sheet. Bake for 20 minutes. You can also air fry these! Remove sweet potatoes and let cool.

4

Meanwhile, add salmon to a baking dish and drizzle with olive oil and sprinkle sea salt. Bake for 8-10 minutes depending on how cooked you like it. You can also broil for 1-2 mins at the end if you like.

5

While the salmon is cooking, assemble the rest of the salad. Add the salmon on top when done!
