No boring kale salads here! Seriously, love me a good kale salad and this combo was absolutely delicious. My trick is to dress/toss the kale with the dressing first and let it “marinate” while you prep the rest of the ingredients. This allows it to soften just enough. This ranch dressing is a healthy take on a classic and is made with cauliflower puree, buttermilk, and lots of flavorful herbs/spices. It worked so well with the sweet potatoes, salmon, radicchio, and pine nuts. This salad combo is amazing and I hope you enjoy it!

Set oven to 400.
Start with the kale. Chop a large head of Kale (about 3 cups) and toss in a large bowl with the creamy ranch. Massage the kale with the dressing for a few minutes. Add in radicchio and mix. You can use your hands or tongs. Let it sit while you prepare the rest of the ingredients in the fridge.
Chop sweet potatoes, toss with olive oil and lay on a cookie sheet. Bake for 20 minutes. You can also air fry these! Remove sweet potatoes and let cool.
Meanwhile, add salmon to a baking dish and drizzle with olive oil and sprinkle sea salt. Bake for 8-10 minutes depending on how cooked you like it. You can also broil for 1-2 mins at the end if you like.
While the salmon is cooking, assemble the rest of the salad. Add the salmon on top when done!
