Pistachio Crusted Salmon

Salmon is one of my fave things to make! Since I do not eat meat, I have salmon about 2 times per week. I like to find new and exciting ways to enjoy it to keep it interesting. This recipe for a pistachio crusted salmon was inspired by my fave restaurant in Jupiter Florida called "Food Shack". They make the best crusted fish ever! This came together in 15 minutes and will be a great recipe to add into the salmon rotation. 

Where do I get my salmon? I get it mostly at Whole Foods or Trader Joes. Depending on the price, I try to buy Wild, but sometimes that is not possible so I buy Atlantic. Whole Foods has a great sustainable seafood standard so I I prefer to buy Atlantic from there. The Trader Joes "BBQ Cut" Atlantic Salmon or Wild Caught Salmon is also a great choice. I have had both!

For this recipe, I use avocado oil mayo to help the pistachios stick to the salmon. I love that as an alternative to traditional mayo because the base is avocado oil verses another vegetable oil like Canola (one of the inflammatory oils).  For the seasoning, I used the chili lime seasoning from Trader Joes (I use it on everything) and some sea salt. If you do not have that seasoning, paprika would work nicely too. Or just sea salt!

A new way to mix up your salmon dishes!

Ingredients:

 2 Salmon Filets
 1 tbsp Avocado Oil Mayo
 Avocado Oil Spray
 Chili Lime Seasoning
 Crushed PIstachios (I used a chili limon flavor and it really added to the taste)

Directions:

Preheat oven to 400.

Line a cookie sheet with parchment paper. Spray with avocado oil. Place filets on top. Spray filets lightly with avocado oil

Using a spoon, spread avocado oil mayo on top of the salmon filets. It should not be too thick, but a thin layer to allow the nuts to stick. Season with chili lime seasoning or paprika to your liking.

Place de-shelled pistachios (I used Setton Farms Chili Limon Flavor - so good!) in a ziplock bag and use the bottom of a cup to crush them. Sprinkle crushed pistachios on top of the salmon. I like to put a lot because I love a good crunch!

Place in the oven and bake for 10 minutes. I like my salmon more medium, but if you enjoy it more well done, cook for 12 - 15 minutes. Enjoy!
