Vegan Veggie Baked Pasta

Vegan Veggie Baked Pasta
Yields1 Serving

Ingredients:

 1 Box of Pasta (I use Banza Chick Pea Pasta)
 1 cup Yellow pepper
 2 cups Broccoli
 1 Large sweet onion
 1 Zucchini
 3 cups Non- Dairy Cheese (I use Trader Joes vegan mozzarella)
 1 cup Chickpea crumbs (I use Watusee Brand)
 1 Jar of your fave Tomatoe Sauce (I use Trader Joe's spicy arbiatta)
 Nutritional Yeast
 Avocado Oil
This was one of those recipes that I made up on the spot - no joke! I was craving a comfort dish. Something warm, hearty and satisfying - but I didn't want to have anything that would upset my stomach. I thought up a couple ideas in my head and just went for it. Eh Voila - it was delicious. Even my father in law couldn't believe it was vegan. That is the best!

Directions:

Prepare Veggies.
1. Chop up a sweet onion and begin to saute in a separate pan. I would start with the onion because it takes the longest. Sauteeing for 15/20 minutes should do the trick.
2. Chop up peppers and set aside.
3. Spiralize (or chop) zucchini and set aside.
4. Set broccoli on a cookie sheet with avocado oil, salt and pepper. I also add Trader Joe's chilli lime seasoning to this. Roast in the oven on 400 for 15 minutes.

Prepare Pasta.
1. Bring a pot of water w/ salt to a boil. Add pasta of choice. Be cafeful to note how long it takes to cook. For example, if you are using regular pasta - it will need a different set of time that the chickpea pasta I use.
2. Add pasta to boiling water when ready. Cook for HALF the amount of time that the box calls for. This is because it will bake in the oven.

Build the bake.
1. Spray the bottom of a baking dish with olive oil.
2. Combine sauteed onion, roasted broccoli, cut up pepper, and spiralized zucchini in a big bowl. Add 1/2 jar of tomato sauce. Toss! Add half cooked, drained pasta to the large bowl along with the rest of the jar of tomato sauce.
3. Combine all ingredients in the big bowl until well mixed. Add salt, pepper and any additional spices you wish. I add chili flakes!
4. Line the bottom of the baking dish with half of the mixture.
5. Sprinkle 1 cup of the Vegan cheese.
6. All the second half of the mixture on top.
7. Sprinkle the second cup of Vegan cheese on top.
8. Generously cover the top with chickpea crumbs (this will give it a nice crunch)
9. Spray the top of the crumbs with some olive oil.

Bake.
1. Add baking dish into 400-degree oven for 25 - 30 minutes. It will be golden and crispy on the top and edges when done.
