Overnight oats are one of my favorite breakfasts in the summer. They are cold, convenient and SO good. It is also a great breakfast to meal prep and have ready to go throughout the week. I love to top my oats with berries and nut butter. You can also mix with yogurt or even have a few scoops as a snack. Obviously, they are very versatile.
In these oats, I used add Health Warrior Vanilla Superfood Protein Powder to AMP them up! This protein powder is my absolute fave (as I am sure you know by now) and takes this breakfast to the next level. One scoop of the powder has 20G of protein. That is solid! It also has 6G of fiber and just 1G of sugar. It is made with REAL FOOD - chia seeds, flax seeds, hemp seeds, pumpkin seeds and tastes good. No funky stuff in this one! I use both the vanilla and chocolate protein powder consistently and truly love it.

Mash banana very well and set aside.
Fill a 12 ounce mason jar with almond milk. Add in mashed banana and mix it up.
Add in cinnamon, vanilla extract and protein powder to the jar and mix again.
Lastly, add oats in and mix well again. Store in the fridge overnight. Enjoy the next day with your favorite toppings - I love berries and nut butter.
