Spicy Peanut Pad Thai Noodles

homemade spicy peanut pad thai 🥜🌶 one of my favorites! weekly staple over here! I used pepper, carrots, bok choy and broccoli- but any combination of veggies work! Lots of options here - you’re gonna want to make this one!

Serving Size: 4 people

1 Shallot, finely sliced
2 Bell Peppers, Sliced Thin
1 C Shredded Carrots (or 2 large carrots into shavings)
2 C broccoli florets (or one head of broccoli cut)
1 C bok Choy, chopped (you can sub any other veggie you want)
1/2 C Scallions, Chopped
2 Tbsp Avocado Oil
1 Brick of Tofu, Cubed (I like the high protein extra firm one from trader Joes)
2 packages @lotusfoods pad Thai Rice Noodles
1 Egg (optional- I did not use last night)

Toppings: Fresh Lime, Chili flakes or chili crunch oil, More scallions and Crushed peanuts

For the Sauce:
1/2 C Peanut Butter (creamy is best)
2 Tbsp Maple Syrup
2 Tbsp Rice Wine Vinegar
1 tsp Chili Flakes (more if you want it v spicy)
1/2 tbsp fish sauce (optional)
1 tbsp Soy Sauce (or coconut aminos)
1/4 C Boiling / Hot water

Prepare / slice all vegetables. Set aside.

Heat up avocado oil in a non large stick pan or wok on medium- low. Add shallot and cook for 1 minute until tender. Add in the rest of the veggies. Lightly season with salt. Toss and let cook for at least 10 minutes covered. Keep mixing every few minutes.

Boil a large pot of water for the noodles.

While vegetables are cooking, prepare the sauce. Add all ingredients to a mason jar. Shake well and set aside.

Dry and cut up into small cubes (about 1/2 inch).

Add in tofu to the pan with the vegetables and toss. Cover and to cook for 5 minutes or until tofu heats up.

While tofu cooks, add noodles to the boiling water. Cook according to instructions (typically rice noodles cook faster and should be rinsed in cold water after).

If you are adding an egg - crack it into the pan.

When noodles are ready, add them to the mixture. Pour in the peanut sauce and toss well!

Serve hot with optional toppings like chopped scallions, microgreens crushed peanuts, chili onion crunch oil and a squeeze of fresh lime.
