This Summer CapreseQuinoa Salad is a fresh and tasty salad that is incredible for the warm summer months! This recipe is super quick and simple to prepare, making it a great option for meal prep when you know you'll be on-the-go and will want access to something healthy and satisfying! This salad is also easy to make ahead of time which means it is the perfect dish to prepare in advance of a summer barbecue, picnic, or wherever else your summer adventures may take you! I love the balance of both sweet and savory in this salad. This recipe will definitely be a staple for me this summer!

What you will need for this recipe:

Summer Caprese Quinoa Salad

Yields1 Serving

INGREDIENTS:

 2 cups Quinoa (cooked, cold)
 1 cup Strawberries, Chopped
 1 cup Cherry Tomatoes, Chopped
 ¼ cup Fresh Basil, Finely Chopped
 ½ cup Fresh Mozzarella Balls (cut up or pearl style)
 ½ cup Olive Oil (IO)
 2 tbsp Balsamic Vinegar (IO)
 ½ tbsp Honey (IO) - or more to taste
 Salt & Pepper to taste

Summer Caprese Quinoa Salad

DIRECTIONS:

Prepare quinoa according to the package instructions. You can make it ahead of time and store it in the fridge if needed. You can use water or broth, either works!

Chop / prepare basil, tomatoes and strawberries. Set aside.

Make the dressing by adding all ingredients into a jar or bowl and combining well.

In a large bowl, add quinoa, strawberries, basil, tomatoes and mozzarella cheese. Toss.

Add in dressing and toss more. Season with more salt and pepper if needed.

Serve cold. Store in the refrigerator for up to 3 days.
