Sweet and Savory Fall Salad

I know that when the chilly weather starts to set in, we're all about our cozy soups and warming stews, but this Sweet and Savory Fall Salad is hearty, and I promise it won't disappoint! It's so festive, and the colors of the butternut squash and dried cranberries really pop, making it look all the more delicious. And it's got that seasonal flare in a light and easy way. It's a great way to get your greens in, and I love it because you can eat it just the way it is, or throw some extra protein on there to really make it a meal. Serve as a healthy side for holiday dinners, a weekday lunch, or add some salmon or chicken for a great dinner option. 

To pull this one together, I used some of my favorite products from Inspired Organics: their Dried Cranberries, Pumpkin Seeds, Extra Virgin Olive Oil, and Honey Dijon Dressing. The dried cranberries add a great tart element alongside sweeter butternut squash, and the pumpkin seeds offer the perfect crunch to make this salad totally satisfying. I love using Inspired Organics' extra virgin olive oil, because I know I can rely on the quality. And their salad dressings, so good! So many awesome flavors! The Honey Dijon is nice and creamy, but still dairy and gluten-free (I could also totally see this as a dipping sauce for chicken fingers!). They have a ton of other good options, too, that could definitely be used for more then adding some flavor to your greens -- think marinades, dips!

Here's what you need for this Sweet and Savory Fall Salad:

  • Kale -- you could also use your favorite salad greens here, but I love to use a heartier one for this salad!
  • Butternut squash -- you could buy a whole squash, or the pre-cubed package
  • Gorgonzola cheese -- I love the extra zing you get with Gorgonzola, but you could also use feta or goat cheese if that's more your style!
  • Dried cranberries -- I used Inspired Organics
  • Pumpkin seeds -- I used Inspired Organics
  • Honeycrisp apple -- or your favorite type of apple!
  • Olive oil -- I used Inspired Organics
  • Inspired Organics Honey Dijon Dressing

Sweet and Savory Fall Salad
Yields1 Serving

Ingredients:

 3 cups Kale, or your favorite greens
 1 tbsp Olive Oil
 1 cup Butternut Squash, Cubed
 1 tbsp Gorgonzola Cheese, Crumbled (sub Feta or Goat Cheese)
 1 tbsp Dried Cranberries
 1 tbsp Pumpkin Seeds
 ½ Honeycrisp Apple, Cubed
 2 tbsp Inspired Organics Honey Dijon Dressing (or more to taste)

Directions:

Prepare the butternut squash: preheat the oven to 400 degrees. Line a cookie sheet with aluminum foil or parchment paper, then add the butternut squash. Toss with olive oil and sea salt to taste. Roast for 25 minutes, or until fork tender.

When the butternut squash is ready, set aside to cool.

Assemble the salad: combine all ingredients in a large mixing bowl and toss with the dressing. Enjoy!
