Chocolate Cereal Bites

I love whipping up quick treats that are definitely going to be a crowd-pleaser, and these Chocolate Cereal Bites for sure fit the bill. They make such a good snack, they're the perfect sweet little pick-me-up, and who doesn't love cereal?! It's totally a nostalgic take on something that's a childhood favorite for a lot of people, and I got to play with my own love for cereal, so I couldn't be happier. On top of all that, these little bites are the perfect mix of sweet and salty, making them even more satisfying and absolutely delicious.

To throw these Chocolate Cereal Bites together, I used some of my favorite trusty products from Inspired Organics: their Honey Toasted O's, Almond Butter, Creamy Peanut Butter, and Honey. The Honey Toasted O's are Inspired Organics take on a truly classic cereal and they are delish! I also love to use the nut butters from Inspired Organics, because they're so simple -- the only ingredient is dry roasted nuts! -- but they're so good, and the texture is always on point. Here's what you need for these Chocolate Cereal Bites:

NOTE: I used a mini muffin tin for this one and filled 12 spots. If you want to make them large, double the recipe and use a classic size muffin tin! 

Chocolate Cereal Bites

Ingredients:

 1 cup Cereal (I used Inspired Organics Honey Toasted O's)
 2 tbsp Honey (I used Inspired Organics)
 2 tbsp Almond or Peanut Butter (I used Inspired Organics)
 1 cup Chocolate Chips, melted
 Sea salt, for topping (optional)

Directions:

Add cereal to a large mixing bowl.

Pour honey and nut butter mixture over cereal in a large bowl and toss until all cereal is well-coated.

In a microwave-safe bowl, melt the chocolate chips by heating for 30 seconds at a time, mixing, then heating for 30 seconds again and mixing. Repeat until fully melted and smooth. Usually takes 2 rounds.

Grease a mini muffin tin (or regular size). Add dollops of melted chocolate on the bottom of each (just enough to cover the base of each). Shake the muffin to evenly distribute melted chocolate.

Distribute coated cereal into each vessel in small clusters (about a small spoonful).

Pour melted chocolate evenly over each cereal cluster and sprinkle with flakey sea salt.

Place the muffin tin in the freezer for an hour until the chocolate has hardened.

Remove gently from each vessel using a knife to scoop out from the bottom. Store in the fridge or freezer! Enjoy!
