Featuring Daiya Foods Cutting Board Shreds
The holidays are here! I personally love this time of year. Lots of fun events, get togethers and of course, good food. I am all about the cozy food during this season. Warm dishes that are good for the soul.. and for you (ish)! In keeping with my seasonal plant-based blog post, I wanted to share some E A S Y plant-based comfort food meals that you can whip up in under 15 minutes. I also love having vegan options around my table and these are some great ideas! For all these recipes, I used Daiya Foods Cutting Board Shreds. They come in three flavors: cheddar style, mozzarella style and pepperjack style. They are all completely soy free and a good source of calcium. In my opinion, they truly the best plant based cheese option. The texture is on point – it melts SO WELL. Melt factor is of course super important (see pictures below!). It also tastes delicious too. If you are dairy free or even just want to experiment with plant-based dishes, these are a great replacement for your regular shredded cheese. Vegan English Muffin “Cheese” Pizzas
The cutest little vegan ‘zas made margherita style.

Ingredients:
Whole Wheat or Gluten Free English Muffins
Daiya Foods Mozzarella Style Cutting Board Shreds
Tomato Sauce/Pizza Sauce
Sliced Cherry Tomatoes
Fresh Basil
Chili Flakes
Directions:
Cut English muffins in half. Add tomato sauce on the surface and sprinkle Daiya Foods Mozzarella Cutting Board Shreds on top. Slice cherry tomato and add them on top. Microwave for 2.5 minutes. Garnish with fresh chopped basil and chili flakes. Enjoy hot!

Vegan “Chili Lime” Cheese Nachos with Lime Dip
Not so basic vegan nachos with chili lime and green onions.


Ingredients:
Tortilla Chips of your Choice (I love Lime Flavored)
Daiya Foods Cheddar and Pepperjack Style Cutting Board Shreds
Chili Lime Seasoning
Sea Salt
Green Onions
Cherry tomatoes
Directions:
Assemble tortilla chips on a large platter. Generously cover the chips with Daiya Foods Cheddar Style and Pepperjack Style Cutting Board Shreds on top of the chips. Dust chili lime seasoning on top (paprika works too) and sea salt. Slice cherry tomatoes and place them evenly around the platter on top of the cheese. Chop green onions and sprinkle on top as a garnish. Place in the microwave for 2 -3 minutes. Enjoy hot! Dip in salsa or any dip you love.
Vegan “Mac & Cheese” Shells
The easiest plant based Mac & cheese you will ever make.

Ingredients:
Noodles of your choice
Daiya Foods Cheddar Style Cutting Board Shreds
Olive Oil
Garlic Powder
Sea Salt
Nutritional Yeast
Chili Flakes
Directions:
Cook noodles according to instructions (I used 3 cups – serves 3 -4 people). When cooked, drain and place back in the pot with 2 tbsp olive oil. Set heat to medium-low. Mix well to coat all the noodles. Sprinkle with sea salt and 1/4 tsp garlic powder (optional). Add in 1.5 C of Daiya Foods Cheddar Cutting Board Shreds and mix well. The “cheese” will start to melt. Continue mixing. Serve with Chili Flakes and nutritional yeast!
