These Apple Spice Pumpkin Muffins will be a staple for us this fall! I love the mix of apple and pumpkin, especially with the cinnamon spice. These are perfect for back to school, back to work or just for fun baking, since they make a delicious breakfast, an easy snack, and they're a great addition to meal prep. They're gluten free, refined sugar free and very delish.
I used a Pink Lady apple because I love the tart flavor, but you can really use any type of apple that you love! Honeycrisp would also be delicious!
Here's what you need for these Apple Spice Pumpkin Muffins:
- Pumpkin puree
- Unsweetened applesauce
- Eggs
- Maple syrup
- Cashew butter -- any other kind of creamy nut butter works here! Almond butter would be great since it also has a more subtle flavor
- Coconut oil
- Vanilla extract
- Cinnamon
- Pumpkin spice
- Apple pie spice, or allspice
- Baking soda
- Almond flour
- Apple

Preheat oven to 350
Combine pumpkin purée, apple sauce, eggs, maple syrup, vanilla, cashew butter and melted coconut oil into a mixing bowl. Mix until well combined.
Add in spices, baking soda, almond flour into the bowl. Mix well.
Chop up medium size apple into small 1/4 inch cubes. Add to the bowl and mix again.
Line a muffin tin with baking cups or grease with spray. Evenly distribute batter among the 12 spots. Shake to even out. Option to add some more spices on top.
Set in the oven and bake for 25 minutes. Enjoy!
