Burrata Pasta with Caramelized Balsamic Vegetables! I have mentioned many times that burrata cheese is the way my heart. Seriously, it is my favorite type of cheese. If I ever go to dinner and there is burrata on the menu, I am 1000 percent ordering it. The other day I snagged it from Trader Joes and decided I wanted to make a new pasta recipe with it. I absolutely love the taste of balsamic onions and peppers with pasta and thought it would be the perfect combination! This dish took around 30 minutes and is definitely going to be one that I make over and over again! Enjoy!

This recipe makes 2 servings! It was enough for me and Jacob + a little extra for seconds.

Burrata Pasta with Caramelized Balsamic Vegetables

 2 Sweet Bell Peppers
 1 Large Yellow / Sweet Onion
 ¼ cup Extra Virgin Olive Oil - You will be using this for a few different things so you may need more
 3 tbsp Balsamic Vinegar - or more to taste
 Kosher Salt
 Italian Seasoning
 2 tbsp Butter (you can omit, or add more olive oil)
 2 tbsp Shredded / Grated Parmesan Cheese
 Fresh Basil
 1 Ball Fresh Buratta Cheese
 ¼ cup Pasta Water (directly from the pot when you boil the noodles)
 3 cups Pasta of your choice

Prepare vegetables. Thinly slice the large onion and bell peppers. Set aside.

Heat up 2 tbsp of extra virgin olive oil in a sauce pan. Add in onions, sprinkle with kosher salt and toss. Let cook on medium for 5 minutes. Mix around. Let sit for another 5 minutes until they start to get browned.

Add in peppers and mix. Let them cook together for 5 minutes or until the peppers start to soften.

Meanwhile, boil water with salt to cook the pasta.

Add 2 tbsp balsamic vinegar to the peppers and onions. Mix and let it cook uncovered for a few minutes.

Let the noodles cook accordingly to the package. When they are almost ready, take 1/4 C of the pasta water directly from the pot and add it to the balsamic vegetables. Mix.

Drain the rest of the pasta water and add the noodles to the sauce pan with vegetables. Mix! Add some Italian seasoning and more salt to taste. You can also add a few more splashes of balsamic vinegar here. Mix well.

Sprinkle in Parmesan cheese and toss! You can add as much as you like 🙂

Add 2 tbsp of butter for the pan and let it melt and toss! You can omit this step and just add a little more olive oil, but I think this adds so much to the flavor!

Lastly, place 1 large ball or buratta cheese on top of the pasta and cut in half. It is an ooozy cheese! Let it heat up slightly before serving. Garnish with fresh basil!
