Cheesy Sausage Marinara Pasta

Sausage pairs so well with pasta, especially in this Cheesy Sausage Marinara Pasta recipe! This dish is perfect to whip up on a cozy fall night for dinner. Each bite is full of warm tomato marinara sauce, flavorful sausage seared with onions, some greens to brighten it up, and of course... lots and lots of gooey cheese. In this recipe I use two kinds of cheese; parmesan and mozzarella, so it's extra creamy and full of flavor. And speaking of flavor, I also love using spicy Italian chicken sausage with this, but add whatever you love. So satisfying and so delightful!

Cheesy Sausage Marinara Pasta
Yields2 Servings
Total Time30 mins

INGREDIENTS:

 1 onion, sliced thin
 1 12oz package chicken sausage, sliced into thin discs
 2 tbsp olive oil, for the pan
 salt & pepper, to taste
 2 cups marinara sauce of your choice
 Large handful spinach or arugula, roughly chopped
 ½ cup parmesan cheese, shredded
 ½ cup mozzarella cheese, shredded
 ½ box pasta (I like using shells)
 Toppings: chili flakes and extra cheese

DIRECTIONS:

Slice onions, sausage and grate cheese (you can also get pre-grated). Set aside.

Boil salted water for pasta. Cook al dente according to instructions.

Meanwhile, in a skillet over medium heat, heat up olive oil. Add in onions. Mix and cover, continuing to cook for 7ish minutes, stirring a few times throughout.

Remove lid. Add sausage, mix and cook for another 5-7 minutes as sausage discs start to brown.

Add marinara sauce and chopped greens. Mix well until heated through.

Mix in the al dente pasta. Then add grated cheese and mix again. Cover briefly to let it fully melt and come together.

Serve with chilli flakes and extra cheese. Enjoy!
