This Classic Spicy Vodka Sauce is creamy, delicious, and seriously DREAMY! I'm always watching videos on how to make vodka sauce, and I feel like I have it memorized now! As a pasta lover, I can confirm how heavenly this sauce is. This is the perfect sauce to whip up for dinner on a night where you feel like treating yourself to a delicious and decadent meal. I kinda winged this recipe after watching a million vodka sauce videos on the gram. I just love watching it come together. It was inspired by Foods of Jane, Dining with Skyler and The Pasta Queen who all have amazing vodka sauce methods.

Here is what you will need to make Classic Spicy Vodka Sauce:
- Olive Oil
- Onion
- Garlic
- Salt
- Tomato Paste
- Vodka
- Calabrian Chili Peppers
- Cream
- Parmesan
- Pasta Water
- Campanella Pasta
- Basil
INGREDIENTS:
DIRECTIONS:
Boil salted water and add pasta of your choice.
Heat up 1/4 cup olive oil. Add 1/2 small onion finely diced and mix until translucent. Season lightly with salt. Add minced garlic and mix until fragrant.
Add 3 tbsp tomato paste and mix. Add 1 oz of vodka and let it simmer / dissolve. Mix again.
Option to add 1/2 tbsp Calabrian chili peppers for spice. Or some chili flakes. Mix and let it simmer for 2 minutes.
Pour in 2/3 cup cream and mix well. Let it cook until it bubbles.
Add a 1/4 - 1/2 cup (or more) of grated Parmesan cheese and 1 small ladle of pasta water. Mix well.
When sauce is creamy, add in pasta when al dente and cooked to your liking.
Toss with some more pasta water and parm if needed. Serve with fresh basil and more parm!
