Easy Spicy Shrimp Ratatouille

This is one of my go to easy weeknight meals! I love comforting warm dishes with LOTS of vegetables. This one comes together in about 30 minutes. Healthy meals that do not take a ton of time are truly the best. I used a ton of Inspired Organics staples for this recipe including the Olive Oil, Canned Diced Tomatoes and Classic Marinara. The best part is this recipe is very versatile and you can switch out the vegetables with whatever you have on hand or what you feel like. Mushrooms, broccoli and peas would also be delicious! You can also pair with pasta, rice, or some fresh bread. Inspired Organics has a great line of organic pastas. I personally love the Cavatappi. Ok, let's get to the details here!

This recipe serves 4 people.

Ingredients:

For Ratatouille:
 2 tbsp Extra Virgin Olive Oil (I used Inspired Organics) 
 1 Large Yellow Onion, Chopped
 2 Bell Peppers, Chopped
 2 Zucchinis, Chopped
 1 Can Diced Tomatoes (I used Inspired Organics)
 1 cup Classic Marinara / Tomato Sauce (I used Inspired Organics)
 2 cups Fresh Shrimp, Raw / Tail Off (or Frozen, but you will need to thaw out)
 ¼ cup Goat Cheese, Crumbled
 2 cups Fresh Spinach
 Sea Salt and Pepper to Taste.
 Optional: Noodles, Rice, Sourdough rolls, baguette, or gluten free bread for dipping
For Garnish:
 Small handful Fresh Basil to taste, Chopped
 1 Jalapeno Pepper, Sliced
 Chili Flakes

Directions:

Chop up vegetables (onion, pepper, zucchini, Jalapeño) and set aside. Chop up basil leaves and set aside.

Heat up 2 tbsp olive oil in a large deep set pan or pot. When hot, add in chopped onion and season with sea salt. Mix and cook for 5 minutes until translucent and slightly browned.

Add in chopped pepper and zucchini. Mix and cook for 10 minutes until vegetables are tender. Cover.

Pour in diced tomatoes and tomato sauce. Stir everything together.

Add in raw shrimp and fresh spinach. Mix well and cover and cook for 5 minutes (or until shrimp is fully cooked).

Portion out into bowls and garish with goat cheese, fresh chopped basil, fresh pepper and chili flakes. Option to serve with fresh sourdough, noodles, rice etc. ENJOY!
