I love blondies! It is kinda like a cookie meets a brownie, but better. These gluten free and vegan chocolate chip oat blondies are so delish. They are a healthier version of a classic blondie and made with simple ingredients. I love using peanut butter as the nut butter base for these, but you can use any creamy nut butter. Almond butter, cashew butter, pecan butter will all work well! You want it to be very creamy because it mixes the best.
What you need for this recipe:
- Nut Butter
- Maple Syrup
- Almond Milk - I used Vanilla Unsweetened from Malk Organics
- Vanilla
- Gluten Free Oat Flour - Almond flour works too!
- Coconut Sugar - You can also use regular sugar / cane sugar. I personally like coconut sugar!
- Baking Soda
- Pinch of Salt
- Dairy Free Chocolate Chips - I used Enjoy Life Foods Mini Vegan Chocolate Chips
- Rolled Oats for Topping

Preheat oven to 350 degrees.
In a large mixing bowl, combine nut butter, maple syrup, almond milk and vanilla. Mix well.
Add in flour, coconut sugar, baking soda, and salt. Mix until a thick batter is formed. I love a spatula for this.
Grease an 8x8 pan or layer with parchment paper. Evenly spread batter in the pan. Option to sprinkle with oats and more chocolate.
Bake for 20-25 minutes.
