I will never be over making banana muffins! The options are endless. I love making my classic banana bread recipe and switching up the combinations/ mix ins. For this version, that is peanut butter and white chocolate. Such a fan of peanut butter in baked goods (duh) and white chocolate makes it extra sweet. So delicious! These are gluten free too!Â
What you need:
- Spotty Mashed Bananas
- Eggs
- Maple Syrup
- Avocado Oil (Or Coconut Oil)
- Creamy Peanut Butter
- Vanilla Extract
- Baking Soda
- Almond FlourÂ
- White Chocolate Chips

Preheat oven to 350.
Mash ripe bananas well in a large mixing bowl. Add in eggs and whisk until well combined. Add in oil, maple syrup, almond butter and vanilla and continue to mix all together. You can use a whisk or hand mixer.
Add in baking soda and flour. Mix well again to get out all the chunks. Lastly, fold in white chocolate chips.
Line/ grease a muffin tin and fill 3/4 the way with batter. Add more chocolate chips on top. Bake for 20 minutes. Let cool and enjoy.
