I have always been a huge fan of granola and muesli on my morning yogurt, smoothies, and oatmeal bowls. Always gotta have a good crunch - right?! I am so excited because I finally made my own -- this homemade Pumpkin Seed Breakfast Muesli. It took no time at all and is SO much healthier than so many store bought ones that tend to have tons of added sugar and sweeteners (no, thank you). It's loaded with protein and fiber and tastes delish. For the main ingredient, I used chopped up Health Warrior Pumpkin Seed Protein Bars - specifically the Maple Sea Salt and Honey Sea Salt. They taste is amazing, and it adds a nice seasonal flare. What I love most about these bars is that they're made with minimal ingredients and have no hidden anything. The honey sea salt bars are made with: Organic Pumpkin Seeds, Organic Wildflower Honey, Organic Milled Quinoa, Organic Coconut Oil, Sea Salt. The Maple Sea Salt is made with Organic Pumpkin Seeds, Organic Maple Syrup, Organic Coconut Nectar, Organic Milled Quinoa, Organic Coconut Oil, Sea Salt. So simple right? Plus, I love pumpkin seeds because they're a great source of plant-based protein and fiber.
Here's what you need for this Pumpkin Seed Breakfast Muesli:

- Gluten Free Rolled Oats
- Raw nuts of your choice -- I used almonds and walnuts
- Shredded Coconut
- Flax Seeds
- Cinnamon
- Pumpkin Pie Spice

Chop up Pumpkin Seed bars into 1/4 inch pieces (or smaller).
Combine in a large bowl with the remaining ingredients.
Mix all together well and store in a large mason jar.
