Overnight oats are a great make-ahead breakfast, and these Pumpkin Spice Overnight Oats are the perfect take for fakk. I love prepping them on a Sunday and enjoying throughout the week. They're also great to have on the go! I love adding tons of mix ins so they're packed with protein and fiber to keep me full longer -- all part of an important breakfast.
Let's break down the ingredients. Oats are a great source of energy/carbohydrates and fiber. I used gluten free rolled oats and Inspired Organics Steel Cut Oats to have a balance of textures. The pumpkin puree and almond milk are the main wet ingredients that help create that creamy/thick texture as they sit overnight. If you really don't like pumpkin, you can sub 1 ripe banana here, but I personally think the pumpkin adds a great seasonal flavor! The vanilla and maple syrup (Inspired Organics Pure Vermont Maple Syrup) give it a defined sweetness, but not too much! For the mix ins, I use Inspired Organics Chia Seeds for those healthy omega-3 fats and fiber. I also added Inspired Organics Pumpkin Seeds for protein and a good crunch! Pumpkin seeds are very high in protein and pretty underrated! Plus, they're perfect for the fall pumpkin theme! You can add as much cinnamon and pumpkin spice as you wish depending on how flavored you want these to be.

- Unsweetened Almond Milk
- Pumpkin Puree -- this is pretty easy to find in the baking section of most grocery stores or online, just make sure it's not pumpkin pie filling
- Vanilla Extract
- Maple Syrup -- I used Inspired Organics
- Rolled Oats
- Steel Cut Oats -- I used Inspired Organics
- Chia Seeds -- I used Inspired Organics
- Pumpkin Seeds -- I used Inspired Organics
- Cinnamon
- Pumpkin Pie Spice

Evenly distribute into mason jars or containers for eating on the go. I used 2 large mason jars for double portions, but you can use 4 individual ones as well.
Store in the fridge overnight or for 4+ hours. Enjoy with fruit toppings, granola and nut butter.
