Apple Pumpkin Spice Cake (Gluten Free)

This Apple Pumpkin Spice Cake turned out to be the perfect healthy, fall-themed dessert for a potluck we hosted earlier this weekend. I wanted to make use of all the apples I had from apple picking, so I modified my original Apple Spice Pumpkin Muffin recipe and turned it into this Apple Pumpkin Spice Cake. Honestly, it turned was so delicious, and it was such a hit at the potluck! Sprinkling some coconut sugar and drizzling some honey on top just before putting it in the oven really brought this cake to the next level and made it such a perfect fall dessert. This recipe is totally gluten free and dairy free. I hope you enjoy! 

If you want to make this recipe completely vegan, you can try using flax eggs instead of regular eggs. I haven't tested it, but I think the cake would just come out a bit denser -- the flavor will still be there!

I made this cake in large 9x13 cake pan. If you use an 8x8 pan, I would add at least 10 minutes to the bake time since it will be thicker. Just keep an eye on it while it's baking!

Ingredients:

 1 cup Pumpkin Puree
 1 cup Unsweetened Applesauce
 4 Eggs
 ½ cup Maple Syrup
 ¼ cup Oil - I like Avocado Oil or Refined Coconut Oil (mild, tasteless)
 2 tsp Vanilla
 1.50 tsp Pumpkin Spice
 1.50 tsp Apple Pie Spice (or all spice)
 1.50 tsp Cinnamon
 1 tsp Baking Soda
 3 cups Almond Flour
 2 Medium Apples, Finely Chopped
 Coconut Sugar and Honey for Toppings

Directions:

Preheat oven to 350.

Add eggs into a mixing bowl and whisk. Add in pumpkin purée, apple sauce, maple syrup, vanilla, and oil into a mixing bowl. Mix until well combined.

Add in spices, baking soda, almond flour into the bowl. Mix well.

Chop up 2 medium size apples into small 1/4 inch cubes. Add to the bowl and mix again.

Line a large sheet pan with parchment paper and grease with coconut oil spray (or any non stick spray). Pour batter into the pan and use a spatula to even out throughout the pan. Sprinkle coconut sugar and drizzle honey on top of the batter (this adds an extra sweetness if you want this as a dessert).

Bake for 35 minutes or until the edges are browned and a toothpick comes out clean. Let cool and enjoy!

    1. Hi! You can try a flaxegg, but I have not tested it. I can imagine it would still be delish, just a little flatter / denser!
