Caprese Style Linguine Pasta

I do love my pasta dishes and sometimes nothing is better than a classic.. like real wheat pasta and lots of cheese! The ingredients in this dish are very simple, but go so well together. The mozzarella cheese and kalamata olives give it a salty taste and mixed with the acidity of the tomatoes - it is  just perfect. 

For this recipe, I used some Inspired Organics staples. Starting with the classic Linguine. It is made of 100% organic wheat and has no additives. It is also imported from Italy, which I love! All of their pastas are delicious and they have a ton of options - including whole wheat and fresh too! I also used the Inspired Organics Olive Oil and Inspired Organics Diced Tomatoes in this recipe. I use their olive oil almost daily and it is one of my favorites! This dish comes together in less than 30 minutes and is a great one to make for a big group or to enjoy for dinner and pack for lunches. It is easy to make a big batch and is a total crowd pleaser! I hope you enjoy!

Ingredients:

 ½ Package Linguine or 3 C Pasta of Your Choice (I used Inspired Organics Linguine)
 1 tbsp Olive Oil (I used Inspired Organics) or Grass Fed Butter (or both)
 1 cup Diced Tomatoes (I used Inspired Organics)
  cup Fresh Basil, Finely Chopped
 1 cup Grape Tomatoes, Sliced
 ¼ cup Kalamata Olives, Pitted
 ½ cup Fresh Mozzarella Cheese, Sliced
 Sea Salt & Pepper to Taste

Directions:

Bring 4 cups of water to a boil with salt in a large pot. Add in pasta and cook according to instructions or to your desired texture.

As pasta is cooking, prepare all the pasta mix ins. Slice tomatoes, chop basil, pit olives, and slice fresh mozzarella cheese.

Drain pasta and add back to a large pot. Set heat to low. Add in olive oil or butter (or both) to the pasta and mix well.

Add in diced tomatoes, fresh chopped tomatoes, and kalamata olives. Mix well in the pasta and let it heat for 2 minutes.

Lastly, add mozzarella cheese and chopped basil (save some for topping) and mix again. Let it heat so the cheese melts slightly. Season to taste with salt and pepper.

Serve with hot with some fresh chopped basil on top.
