These Honey Balsamic Chicken Tenders are such an easy and delicious meal, great for a quick weeknight dinner or even getting ahead on some meal prep for the upcoming week. They're so good on their own (did anyone know what an amazing combo honey and balsamic vinegar is??), but they also pair well with just about anything you can think of: roasted or steamed veggies, rice, pasta, or a simple green salad! It makes them a great option to cook up ahead of time and have on hand for throwing together a bunch of different meals throughout the week.
For mine, I used the Balsamic Vinegar, Honey, and Olive Oil from Inspired Organics. I always love their products, and I can depend on them to be high quality and bring the best flavors to whatever I might be cooking! The balsamic vinegar and the honey are both crucial for getting the perfect flavor, so definitely find a couple you really like! Here's what you need for these Honey Balsamic Chicken Tenders:
- 1 package of chicken tenders (about 1-1.5 lbs., or about 10-12 chicken tenders) -- you can usually find a package of these at the grocery store, but if you're really having a hard time, pick up about a pound of boneless skinless chicken breast and cut each breast into thinner, longer strips until you have 10-12 tenders!
- Olive oil -- I used the Extra Virgin Olive Oil from Inspired Organics
- Balsamic vinegar -- I used the Balsamic Vinegar from Inspired Organics
- Honey -- I used the Wildflower Honey from Inspired Organics
- Italian seasoning
- Salt and pepper
- Chili flakes -- optional, but a great way to throw in a touch of spice!
Ingredients:
Directions:
Preheat the oven to 400 degrees.
Combine olive oil, balsamic vinegar, honey, and spices in a small bowl and mix well.
Remove raw chicken tenders from the package and place in a mixing bowl or bag (*handle carefully and make sure to wash hands well!). Pour marinade on top and mix so all chicken tenders are well coated. Place chicken in the fridge to marinate for at least 30 minutes and up to 1 hour.
(If short on time, you can skip the marinating step, but it adds such a deeper flavor! If skipping, just mix the marinade and raw chicken and then move on to the next step).
Line a baking sheet with parchment paper and lightly grease with non-stick cooking spray. Remove the chicken tenders from the bowl and place, spaced evenly, on the baking sheet. Drizzle extra marinade over the top. Add more spices or a sprinkle of chili flakes if you want to turn up the heat!
Bake for 30 minutes, or until the chicken is fully cooked (internal temperature of 165 degrees).
Enjoy with on a salad or with a side of vegetables, rice, or pasta -- the options are endless! Delish cold or hot!
