Kale Salad with Apple Cider Maple Dressing

This Kale Salad with Apple Cider Maple Dressing is my absolute favorite go-to salad! It has crunchy pumpkin seeds, sweet dried cranberries, creamy and buttery avocado, and tangy goat cheese. So much YUM! I also always use my homemade Apple Cider Maple Dressing which is a recipe I have been making forever and am so excited to finally share! The dressing is made of a handful of kitchen staples and is SO easy to whip together. I especially love using the brand Inspired Organics for my ingredients- their apple cider vinegar, extra virgin olive oil and pure maple syrup make the dressing extra tasty! I am a long time fan of IO and use their products every day in our kitchen!

Pair this salad with your favorite protein - grilled salmon, roast chicken, crispy tofu - whatever you love! I actually paired mine with an air fried half chicken. I bought a buttermilk brined half chicken and lightly seasoned with chili lime seasoning. I air fried for 10 minutes on 360°, flipped over, and then cooked for another 10 minutes on 400°. Then, for the dressing, the recipe for my Apple Cider Maple Dressing is good for this one large kale salad (serves 4). But one of my favorite tricks is to double it up and make a big batch for the week! Delicious and easy af salads all week long!

Kale Salad
Yields4 Servings
Total Time25 mins

INGREDIENTS:

Apple Cider Maple Dressing
 ¼ cup Olive Oil
 2 tbsp Apple Cider Vinegar
 1 ½ tbsp Maple Syrup
 1 tsp Dijon Mustard
 ¼ tsp Salt
 ¼ tsp Pepper
 ¼ tsp Garlic Powder
Kale Salad
 4 cups Curly Kale (remove stems if you prefer)
  cup Dried Cranberries
  cup Pumpkin Seeds
  cup crumbled Goat Cheese
 ½ large Avocado, cubed

DIRECTIONS:

For the Dressing

Add all dressing ingredients to a mason jar and give it a good mix/shake! Recipe is good for this large kale salad (serves 4). But double it up if you want a big batch for the week!

For the Salad

Chop kale (remove stems if you prefer). Add to a large serving bowl a massage dressing into kale. Top with cranberries, pumpkin seeds, avocado, and goat cheese. Give it a good toss, pair with your favorite protein and enjoy!!
