This is my mom's super easy roasted green bean and carrots recipe. You can enjoy each of these recipes separately or enjoy them together like pictured.
Note on the green beans- when you take them out of the oven, they may seem crunchy when you remove them, but they soften after sitting for a while. Do not overcook!
Ingredients:
Directions:
Preheat oven to 400.
Wash and clip green beans (if not already clipped). Coat with olive oil and honey in a large bowl.
Spread evenly on cookie sheet. Season with chili lime, salt and pepper.
Bake on 400 (convention) for 8 minutes.
Wash carrots and dry. Slice them lengthwise in half.
Add to a large bowl and coat with olive oil. Season with salt, pepper and thyme.
Place on cookie sheet (lined up).
Drizzle balsamic glaze on top.
Bake on 400 for 12 - 14 minutes.
