My mom has been making these potatoes since I was a kid. I love how they are perfectly crunchy on the outside and soft on the inside! Such a favorite in my house!

Preheat oven (convention) to 375 or regular oven 400.
Wash potatoes and cut each one in half. Coat evenly with olive oil and honey in a large bowl.
Add in seasoning to taste and TOSS well. You want the seasoning to be even on the potatoes.
Place potatoes in shallow roasting pan. Bake 1.5 hours. Check after 1 hour you may have to toss them.

I tried making these and they totally burned after one hour in the oven. I probably should’ve checked on them earlier but figured 1 hour would still leave plenty of time since the total cook time says 1.5 hours. I have a regular oven & cooked them at 400 degrees – 45 minutes probably would’ve been plenty.
