Roasted Pepper Dip with Goat Cheese

I am a dip girl through and through, and WOAH! This Roasted Pepper Dip with Goat Cheese is definitely a new favorite of mine. Roasting the peppers really brings out their sweetness and gives them a nice charred flavor. The roasted peppers also make this dip silky and smooth, especially with my other addition of greek yogurt. Oh! and lets not forget, maybe the best part of all, goat cheese! This cheesy addition along with the roasted peppers creates such an addictive, sweet, tangy, and buttery flavor! My Roasted Pepper Dip with Goat Cheese is incredibly easy to make and is such a great snack, side dish, or addition to your meal prep rotation. All it takes is a quick roast in the oven and tossing all of the ingredients in a food processor, and then you've got this delicious goodness. I am truly so excited about this one! 

Goat Cheese Roasted Red Pepper Dip
Yields4 Servings
Cook Time35 minsTotal Time45 mins

INGREDIENTS:

 1 lb Bell Peppers (this is 1 package of mini bell peppers or ~3 full sized peppers)
 ¼ cup Olive Oil (plus more for drizzling)
 4 oz Goat Cheese (1 small log)
 2 tbsp Greek Yogurt (~half of a 5oz container- full fat)
 1 tsp minced garlic
 Salt & Pepper, to taste
 Optional: Chili Flakes for spice (I like 1/2 tsp!)

DIRECTIONS:

Preheat oven to 375°. On a sheet pan lined with parchment paper, toss chopped peppers with a drizzle of olive oil, salt and pepper. Roast for 35 minutes, or until soft and lightly charred.

Add the roasted bell peppers, 1/4 cup olive oil, goat cheese, greek yogurt, garlic, salt and pepper into a food processor or blender. Pulse/blend until smooth. I like to keep a little bit of chunk, but use your own discretion.

Serve with some drizzled olive oil on top, micro greens if you wanna be fancy and chili flakes if you want spice.
