Burrata Pesto ‘Viral Style’ Wrap

Burrata Pesto 'Viral Style' Wrap. I am a big fan of wraps- they are super quick and easy to make, are mess-free, and they can make such a comforting and satisfying meal any time of day! They are also super versatile and you can really mix and match so many different combinations of ingredients.

My current obsession is this Burrata Pesto Wrap - with a special trick! It has melty burrata, creamy pesto, fresh veggies, and an extra zip of flavor thanks to a quick drizzle of balsamic vinegar and some pepper. So delicious! I had so much fun making this recipe because of the tortilla folding hack I tried. This trick is super easy- all you do is cut a slit halfway through your tortilla, put your ingredients in each one of the four "quadrants", and then fold it up clockwise into a triangle. Heat it up in a pan and you've got a cheesy, warm, and gooey wrap! This trick is especially great because of it's triangle shape. Unlike a typical wrap that you would roll up, this special trick helps all the ingredients stay snug without slipping out when you take a bite!

Of course, you can totally make this wrap the traditional "roll" way and it would still be so delicious! The burrata pesto combo is amazing and I love making it with a big side of greens for an elevated- but still so easy- work from home lunch. Burrata Pesto 'Viral Style' Wrap
Yields1 Serving
Prep Time10 mins

INGREDIENTS:

 1 Spinach Tortilla
 Pesto, spoonful
 Tomato, thinly sliced
 Burrata, torn
 Arugula, handful
 Balsamic Vinegar
 Fresh Ground Pepper

DIRECTIONS:

Cut a tortilla halfway up through the middle.

Put ingredients in each of the four “quadrants”. Starting with pesto in the bottom left, then one for tomatoes, one for burrata, and lastly arugula.

Drizzle on some balsamic glaze and grind pepper on top.

Fold clockwise starting by flipping up the bottom left section with pesto.

Heat up in a greased pan for ~5 minutes per side, flipping a few times to make sure everything gets warm! Enjoy!
