Single Serve Egg Salad Wrap

So who's in charge of deciding what random foods get to go viral on social media?  Remember when egg salad had its **moment**. But seriously, we love egg salad.  And if you haven't jumped on the bandwagon yet, let my Single Serve Egg Salad Wrap be your inspiration! This wrap is super duper quick and easy to whip up. Plus, it has such a great balance of protein, healthy fats, AND carbs which leaves me feeling satisfied and happy. And above all, it is oh so tasty!  

My Single Serve Egg Salad Wrap does not require mixing up a whole big bowl of egg salad- all you need is enough eggs for yourself and a few staple ingredients. And don't let the internet trolls scare you away from hard boiled eggs, haha! They actually make such a great addition to any meal prep you may do and having a batch in your fridge is great for quick lunches like this wrap or even for having as an easy grab-and-go snack. And if meal prep is not your thing, grabbing a bag of hard boiled eggs at the store is just as great!

INGREDIENTS:

Egg Salad
 3 hard boiled eggs
 squeeze of mayo
 squeeze of honey mustard
 salt, pepper, & elote seasoning (from TJ's)
Wrap it up!
 1 tortilla (lightly toasted in pan with some oil)
 handful mixed greens
 pickled onions
 shredded cheddar
 parsley flakes

DIRECTIONS:

Prepare egg salad- Cube hard boiled eggs (I like using a egg slicer for quick and easy little pieces!). Add eggs in a bowl with a squeeze of mayo, honey mustard, and a pinch of salt, pepper, and elote seasoning to taste. Mash/mix together using a fork.

Prepare tortilla- I like to lightly warm/toast my tortilla in a pan with a little bit of oil. This adds such a great texture and flavor!

Assembly- Add mixed greens then egg salad onto tortilla. Top with pickled onions, shredded cheddar, and a sprinkle of parsley flakes. Enjoy!
