This warm arugula salad is insanely good! Such an easy dish to throw together that actually looks and feels super fancy 😉 It takes way less time than you think and is bursting with flavor. In the time you would normally chop up the veggies, you can saute the onions and mushrooms. There is something about warm vegetables on a salad that is so delicious!Â
The key to any salad is the DRESSING. The dressing MUST add an incredible amount of fresh flavor and tie all the ingredients together. I have been head over heels with Grandma Luckey's Dressings. They are a Michigan local brand and mother/daughter duo. We have never had salad dressing that is filled with so much flavor. They use incredible ingredients like fresh herbs to make the flavors pop. They have four delicious flavors and we LOVE them all. Jacob and I are absolutely obsessed. This is an absolute must-try!!!! Highly recommend this dressing if you want to fall in love with salad again! It makes any salad unreal!!!
The four flavors are Maple Herb, Garden Herb, Lemon Herb (used in this recipe), and Dill Pickle Herb. They are all preservative-free, gluten-free, and sugar-free. They are all vegan except lemon herb.

Thinly sliced small red onion (or half a medium one).
Heat up olive oil in a pan on medium. Add in red onions and season with salt. Cook for 5 minutes.
Add in mushrooms and mix. Cook for another 5 minutes.
While onions/mushrooms are cooking, compile other toppings in your salad bowl. Start with arugula (dress lightly) and then add sun-dried tomatoes and goat cheese.
When mushrooms and onions are ready add on top.
Drizzle more dressing and add fresh ground pepper to taste.
Enjoy on its own or pair with a protein!
