Cauliflower Gnocchi with Veggies & Red Sauce!

The cauliflower gnocchi, one of my all-time favorites from TJ’s, gets a makeover in this fast and easy dinner. Tossed with a delicious red sauce, a little sweetness from caramelized onions, a little tang from some crumbled goat cheese, the flavors are out of this world.

Pesto Cauliflower Gnocchi with Broiled Salmon!

Another easy dinner brought to you by cauliflower gnocchi and a simple refreshing pesto (try TJ’s Vegan Kale Pesto)! Paired with broiled salmon, it’s so simple to throw together, super satisfying, and a great option to have in your back pocket for a weeknight meal!

Easy No Boil Pasta Bake (Gluten Free)!

This is one of those super easy set-it-and-forget-it type of dinners. You just throw everything in the baking dish and let it do it’s magic in the oven. Leaning on freezer and pantry staples, this is a great recipe to whip up on an otherwise busy weeknight!

Lemon Pepper Salmon!

A healthy and delicious way to enjoy salmon! It’s just a few ingredients, and it’s ready in no time! I love to make this in batches for meal prep, because you can definitely eat it hot with a side of rice and veggies or cold on top of a salad!

Roasted Cinnamon Honeynut Squash!

This one is definitely a seasonal recipe, but a great one to have on hand for the fall! Trader Joe’s sells these adorable and delicious honeynut squashes, perfect for roasting as a side dish to go with dinner! They cook faster than butternut squash, are easier to cut, and totally versatile. If you see these, definitely give them a try!

Everything But the Bagel Delicata Fries!

Another great fall squash recipe with TJ’s maybe most famous seasoning blend! These are awesome as a side for any meal, an appetizer, or even a snack! I love to meal prep these and then have them on hand for anything I might want to use them for.

Pistachio Crusted Salmon!

It’s no secret that salmon is one of my favorite things to make for dinner. It’s easy, healthy, satisfying, and it cooks up in no time. This nut-crusted version comes together in just 15 minutes. I love Trader Joe’s BBQ Cut Atlantic or Wild Salmon Filets.

Cauliflower Gnocchi with Pesto & Peas!

I seriously make cauliflower gnocchi like once a week. It’s so easy, and so satisfying! In this recipe, I am all about the pesto, peas, and pecorino. The flavors all come together so well for a dinner that’s really a winner!

Chili Lime Butternut Shoestring Fries & Salmon!

So tasty, so satisfying, and it all comes together on one sheet pan! The spiralized butternut squash I used here is really just a fun way to get in some veggies, but it’s the chili lime seasoning that really makes this dinner shine. Honestly, I put it on just about everything.
